ADZUKI BEAN BUNS
Adzuki beans (raw) 500g
Brown sugar add to your liking
Pizza dough 500g
Sesame seeds for topping
Olive oil for pan frying
Rinse the beans, and soak overnight with water (about 900g). Pour beans and water into a large pot, and heat on high until boiling. Turn the heat down to medium and continue to cook until the water is almost evaporated. Add the brown sugar and keep cooking until the water is completely evaporated. Let the bean filling cool completely.
Divide the pizza dough into 30g balls. Using a small rolling pin, roll each ball into a flat, round pancake.
Add the filling on top of the flat dough, then slowly close the edges, wrapping the dough all the way around the filling.
Sprinkle the top of each filled bun with sesame seeds.
Heat a frying pan to medium. When the pan is warm, add enough oil to keep the buns from sticking. Working in batches, place the buns onto the oil and cook on both sides until golden brown.
